3 bacon rashers, rind removed, chopped
1 onion, diced
2 carrots, peeled, chopped
2 celery sticks, chopped
1 desiree potato, peeled, chopped
1 turnip, peeled, chopped
1 parsnip, peeled, chopped
2 garlic cloves, crushed
1L beef stock
400g can chopped tomatoes
100g Wholemeal Spirali Pasta
Salt & Pepper
Place the bacon, garlic and onion in a large saucepan and fry for 5 minutes. Add carrots, celery, potato, parsnip and turnip in a large saucepan and stir to combine. Cook over high heat, uncovered, stirring often, for an additional 5 minutes.
Add the beef stock and tomatoes to the pan, cover and bring to the boil. Reduce heat to medium-low. Simmer, covered, stirring occasionally, for 30 minutes or until the vegetables are tender.
Increase heat to high. Add pasta and cook, uncovered, stirring occasionally, following packet directions or until pasta is al dente. Season with salt and pepper. Ladle into 4 separate Mason jars and allow to cool before adding lid and storing in the refrigerator.
