Be My Valentine Mini Cherry Cheesecake

I don't know about you, but sometimes around Valentine's day we find there is an abundance of flowers and chocolates. Don't get us wrong, we wouldn't say no to a beautiful bunch of blooms or some decadent Belgium chocolate (hint, hint to our other half) however to mix things up this year, we thought we would create a recipe that's 'oh-so good' on the lips & won't make us feel the same guilt after eating an entire box of chocolates! 

 

Why not surprise your 'special someone' by making a few of these super sexy Mini Cherry Cheesecakes that are sure to please. Oh, and did we mention that they are Raw & Vegan too!

 

 

 

Mini Cherry Cheesecakes

Makes 24 mini cheesecakes

 

Ingredients:

 

For the base:

1 cup of walnuts

6 Medjool Dates (remove pits & soak for 10 mins then drain)

1/4 cup shredded coconut

1/4 teaspoon of sea salt

 

For the filling:

1 cup cashews (soaked for 3 hours then drain)

1/2 cup pitted cherries

1/4 cup agave nectar

1/4 cup coconut oil

1 teaspoon vanilla extract

 

For the cherry drizzle (optional):

1/2 cup pitted cherries

1/2 cup water

Instructions:

 

For the base:

Once dates have been soaked, pitted and drained add to your food processor. Add remaining ingredients and pulse until the nuts are crumbled and all ingredients stick together on it's own.

 

In a 24 mini muffin tray, press about 1 1/2 tsp of the mixture into the bottom of each mold.

 

For the filling:

Once cashews have been soaked and drained, add to a high speed blender along with the cherries, agave nectar, melted coconut oil, and vanilla. Blend until well combined and smooth. Pour approximately 1-2 tablespoons into each mold.

 

 

For the cherry drizzle:

Add cherries and water into a deep bowl and witch a hand stick blender, pulse until smooth. Once smooth, pour through a fine sieve to remove any chunks. 

 

Once all the mini cheesecakes have been filled, freeze the cheesecakes for 1-2 hours until solid. Once frozen, remove them from the trays and allow to thaw for 10 mins. Add a small amount of cherry drizzle (optional) before serving to your Valentine!
