It wouldn't be an easter celebration without some yummy eggs... However we aren't talking about the traditional chocolatey kind. Our eggs and hearts are a treat that everyone can enjoy!
A breeze to make & completely customisable, our easter eggs & hearts are gluten free, refined sugar, artificial colour, nut and dairy free. They are made from the goodness of raw cashews, berries and naturally sweetened with maple syrup. We hope you and your family enjoy these "berry" good easter treats as much as we do!
Raspberry & Blackberry Treats
Prepping time: 25mins
Serves approximately: 20
1 cup raw cashews (soaked overnight or for at least 4 hours)
1/3 cup of frozen raspberries (or strawberries)
1/3 cup of frozen blackberries (or blueberries)
1/2 cup of coconut milk
4 tablespoons of maple syrup
Melted chocolate to garnish
-Drain soaked cashews and add to high speed along with maple syrup and coconut milk. Blend until smooth and cre silky. Add extra coconut milk if needed.
-Transfer half of the mixture into a separate bowl.
-With the remaining mixture in the food processor, add in frozen raspberries and blend until well combined. Transfer this mixture into a piping bag.
-Add the 2nd mixture back into the food processor, add in frozen blackberries and blend until well combined. Transfer this mixture into a separate piping bag.
-Add the piped mixes evenly into moulds of your choice. Once filled, tap onto a bench to remove any air bubbles.
-Transfer the moulds to the freezer and let sit for 6 hours or until set. Garnish with a drizzle of chocolate sauce before serving
