This healthy granola is naturally sweetened with maple syrup. It's made with oats, coconut oil, coconut flakes and nuts... and is oh-so DELICIOUS!

Crunchy Nut Granola
Prep time: 5 mins
Cook time: 20 mins
Serves: 6 cups
(Gluten Free)
INGREDIENTS:
4 cups certified gluten-free oats
1½ cup raw pecans and ½ cup almonds
½ cup coconut flakes
1 teaspoon sea salt
½ teaspoon cinnamon
½ cup melted coconut oil
½ cup maple syrup
1 teaspoon vanilla extract
METHOD:
Preheat oven to 180ºC and line a large baking tray with baking paper. In a large bowl, mix the oats, nuts, salt and cinnamon. Stir to combine.
Pour in the coconut oil, maple syrup and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer. Bake for about 10 minutes, stirring and then adding the coconut flakes. Add the tray back in the oven for a further 10 minutes until the oat mix resembles a golden colour.
Once taken out of oven, allow the granola to cool completely before breaking into pieces. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months.
NOTES:
GLUTEN FREE: Be sure to use certified gluten-free oats.
NUT FREE: Use seeds, like pepitas or sunflower seeds, instead of nuts and add dried fruit once cooled.
SERVING SUGGESTIONS: This granola is best served with your choice of nut milk, yogurt and/or fresh fruit, such as fresh blueberries.
