Honey Garlic Roasted Carrots
With sweet and savoury flavours, these Honey Garlic Roasted Carrots are so tasty and easy to prepare. They are so yummy, you’ll struggle to stop yourself from eating the whole bowl.
INGREDIENTS
6 medium sized carrots
1 clove minced garlic
1 tsp Balsamic vinegar
2 tbsp Honey
1/4 tsp Dijon mustard
2 tbsp Olive oil
Pinch Salt & Pepper
METHOD
-Preheat oven to 180 degrees celsius. Line a baking tray with foil and lightly spray with nonstick cooking spray.
-Peel and cut carrots into strips and add to medium sized bowl.
-In a seperate bowl, whisk together all remaining ingredients and pour over carrots. Toss until evenly coated. Line carrots in a single layer.
-Bake for 30-45 minutes until fork tender, stirring after 20 minutes. Then place on serving tray or paper pockets (as shown)
Curried Sweet Potato Wedges
This recipe turns the humble sweet potato into a dish with a serious bang of flavour. Easy to prepare, a recipe with just five ingredients, this is sure to become a go-to!
INGREDIENTS
4 medium sized Sweet potatoes
1/2 tsp Chilli powder
1/2 tsp curry powder
2 tbsp olive oil
Pinch Salt & Pepper
METHOD
-Preheat oven to 180 degrees celsius. Line a baking tray with foil and lightly spray with nonstick cooking spray.
-With skin on, cut carrots into wedges and add to medium sized bowl.
-In a seperate bowl, whisk together all remaining ingredients and massage into potatoes. Toss until evenly coated. Line potatoes in a single layer.
-Bake for 20-35 minutes until fork tender, stirring after 10 minutes. Then place on serving tray or paper pockets (as shown)
Garlic & Chilli Roasted Zucchini Wedges
You’ll never look at zucchini’s the same way again after trying out this recipe. Super simple and full of flavour, this quick and easy recipe will become a family favourite.
INGREDIENTS
4 zucchinis
1 fresh red chilli finely diced
1 clove minced garlic
2 tbsp olive oil
Pinch Salt & Pepper
METHOD
-Preheat oven to 180 degrees celsius. Line a baking tray with foil and lightly spray with nonstick cooking spray.
-With skin on, slice zucchinis into thin strips and add to medium sized bowl.
-In a seperate bowl, mix together all remaining ingredients and to zucchinis. Toss until evenly coated. Line individual zucchini strips onto the tray.
-Bake for 15-25 minutes until fork tender, flipping after 10 minutes. Then place on serving tray or paper pockets (as shown)
